I was a lucky kid. My Mom’s full time job was being a Mom. That meant we had home cooking all the time. Mom usually took a fair amount of time to make dinner in the evening, but sometimes she made breakfast for dinner. One of her go-to one pan meals was what she called an omelet back then, but we now call a frittata. I was hankering for this tasty blast from the past recently. I started by nuking a russet potato, chopped it with some onion, red bell pepper, zucchini and some other bits and bobs from the fridge. There is really no limit to what you can put in there.

Saute’ until things begin to brown a bit. Beat up some eggs; I used 6 here.

Pour the eggs over the whole mess, turn the heat WAY down and cover.

When the edges are mostly set, top with cheese of your choice, or not…

And serve it up…maybe with some fresh pineapple?
