Looking for a quick, easy, healthy AND tasty thing for just about any meal? Take any fresh veggies you have, cut them up into hearty bite sizes, sprinkle some balsamic vinegar and a good quality olive oil, some seasoned salt and pepper, roast in a 375 degree oven until the veggies are tender and browned at the edges. Heck, sometimes I even eat just this for a meal!
When I made this, I had some parsnips from the garden, small onions, mushrooms, celery, sweet potatoes & zucchini. Things I have included before are carrots, red potatoes, artichoke hearts, garlic cloves, turnips, beets…really, there is no limit! While you make life DIY, make it tasty too!
