Last year we had two or three parsnips overwinter. In the summer they went to seed. This year, we have a bumper crop of volunteer parsnips.
We have had volunteer plants crop up in the garden in the past; tomatoes, tomatillos, onions and garlic, just to name a few. While they are rarely where we wanted them planted, we usually just roll with it. I mean, why not? What’s not to love about food you can eat that literally planted itself? I know that last year, the very best tomato plant we had was a volunteer Roma tomato. If you garden, have you ever tried parsnips? They look like a white carrot and have a delicate (to me) carrot-ish flavor. Give them a try and make life DIY!
