This morning was very productive. Did lots of harvesting, which I will share in a few future posts. One of the crops harvested was the basil. We grow standard San Genovese basil as well as Purple Basil. Mom likes to make basil vinegar. I go crazy making and freezing pesto. (More on that later!) After a busy morning, in which I only had a couple cups of coffee for breakfast, I was getting hungry. So, this happened…

The creaminess of the fresh mozzarella, the fresh bite of the basil, the fruitiness of the ripe tomato and olive oil, with just a sprinkle of salt and pepper. Simple and elegant at the same time.
