Every year, I preserve veggies from the garden. One of the ways I like to do that is by dehydration. It is nice in the depth of winter to have shelf stable ingredients for cooking with; veggies that I grow myself and that are fresher than anything I could possibly buy. Things I like to dehydrate include onions, sweet peppers, carrots, apples, pears and cherries. In today’s post, I am drying bell peppers and tomatoes from the garden. I start by washing and chopping my veggies.

There were about 10 large peppers here. This is how much of the jar they filled, leading to my supposition that I could probably fit a total of 30 into this jar. That is a lot of food in a very small space!
