Every year, I preserve veggies from the garden. One of the ways I like to do that is by dehydration. It is nice in the depth of winter to have shelf stable ingredients for cooking with; veggies that I grow myself and that are fresher than anything I could possibly buy. Things I like to dehydrate include onions, sweet peppers, carrots, apples, pears and cherries. In today’s post, I am drying bell peppers and tomatoes from the garden. I start by washing and chopping my veggies.
Before ! Drying…
After drying!
There were about 10 large peppers here. This is how much of the jar they filled, leading to my supposition that I could probably fit a total of 30 into this jar. That is a lot of food in a very small space!
Do you use a dehydrator? Share with me how you like to use it as you make your own life DIY!

And how do you REhydrate these when you want to use them?

Add hot water and let them sit. Or if I am making soup or something with a fair amount of water I just throw ’em in.
